Easy, Make-Ahead Meals for Busy Parents

I am the mother of an energetic toddler, and a working professional with a full time job. My husband lives and works in another continent (for now), and my extended family is spread out over the globe. In order to manage all the moving parts in my life AND keep my sanity in check, I have developed some routines that I adhere to in a militant fashion. One of those is meal prepping and ensuring that I have a week’s worth of prepped (often cooked) food in the refrigerator before starting my working week on Monday. I can’t tell you how life-saving meal prepping has been to my life.

Over the last several days, many of us are likely finding ourselves home all day with the entire household. I can appreciate how most of us have our hands (and minds!) full with the gravity of recent happenings. Cooking elaborate meals may not be a priority, or even possible, for many of us right now. Keeping these in mind, I would like to share some of my go-to make-ahead meals that keep my family nourished and happy.

A couple of notes: The recipes are vegetarian, but it would be easy enough to add your protein of choice to them. Also, I try to pick recipes that are very forgiving, so if you don’t have a certain spice or don’t care for an ingredient, you should be able to easily skip/replace them without affecting the outcome too much.
